Honey belongs in cocktails; honey also refuses to go into them. Straight from the jar it seizes into a stubborn glob at the bottom of a cold shaker, which is why the old tiki bars pre-blended honey into a pourable mix — and why we do too. Ours starts with orange blossom honey, the varietal kind with real citrus-and-floral character, so the honey brings its own perfume instead of just sugar.

That doubling of citrus-on-citrus is the trick: honey with an orange accent meeting actual lime in the glass. Its finest hour is a Navy Grog, and it earns its shelf space with a Missionary's Downfall or a Rangoon Gimlet. Come winter, it's a toddy waiting for a kettle — and it pours into hot tea while a honey jar is still handing you the spoon.

Once opened, refrigerate and use within 90 days — unopened, it keeps for two years from the date of manufacture.
